Old Fashioned Bean Soup — Hoyt Sherman’s

Wash beans thoroughly. Place in lg. kettle and cover with water. Add 2 T. of salt. Soak overnight. In morning drain. Add 2 qt. water and ham or hamhocks and bring to boil. Simmer slowly 2 1/3-3 hours. Add 1 lg. onion chopped, 1 lg. can tomatoes (optional), one pod red pepper (optional) or one t. chile powder, juice of one lemon, salt and pepper to taste, simmer another 30 minutes or so. Serve with crackers and a green salad. Serves 8 generously.
