Old Fashioned Bean Soup II — Hoyt Sherman’s

Wash beans thoroughly. Place in lg. kettle and cover with water. Add 2 T. salt. Soak overnight. In morning drain. add 2 qt. water, ham or hamhocks, 1 lg. onion chopped and bring to boil. Simmer slowly 2 1/2-3 hours. (bay leaf optional)
Add one lg. can tomatoes, or 1/2 c. ketsup, jc. of one lemon, salt and pepper to taste, simmer 30 minutes- 1 hour (optional–chile pwd, red pepper pod)
Serve with crackers and a green salad. Serves 8 generously.
