There is not shortening or sugar)
1 pkg yeast
1/4 c. water
3/4 c. flour
2 c. more warm water
1 t. salt (1 use more)
about 5 cups flour
Soften yeast in 1/4 c. H2O, stir in 3/4 c. flour and knead this until elastic, then form ball. Drop dough ball into the 2 cups water–it will sink then pop up–let it rise there for 15 minutes. Pour dough and water into big bowl–stir in salt. Then work in remaining flour cup by cup. Turn out on floured board and knead until elastic. Form into ball and place in buttered bowl–turning to coat ball. Let rise til double. Punch down–turn out on lightly floured board and cut in 2 pieces. Make elongated loaves and cut across tops diagonally. Let rise til double then bake 450 30 minutes.
