{"id":10,"date":"2009-07-22T18:16:28","date_gmt":"2009-07-22T22:16:28","guid":{"rendered":"http:\/\/terrywessel.com\/wordpress\/?p=10"},"modified":"2009-11-06T20:53:51","modified_gmt":"2009-11-07T01:53:51","slug":"mexican-black-bean-soup","status":"publish","type":"post","link":"http:\/\/wesselbest.com\/?p=10","title":{"rendered":"Mexican Black Bean Soup &#8211; Beth"},"content":{"rendered":"<p>1 1\/2 T. olive oil<br \/>\n1 large yellow onion, chopped<br \/>\n4 garlic cloves, minced<br \/>\n1 jalapeno pepper, chopped finely (I used this VERY sparingly so I could feed it to kids!)<br \/>\n2 tomatoes peeled and chopped<br \/>\n2 15-ounce cans black beans<br \/>\n2 potatoes, pealed and diced<br \/>\n7 cups water<br \/>\n1 bouillon cube<br \/>\n1\/2 c fresh cilantro, chopped<br \/>\n1 T cumin<\/p>\n<p>2 T. lime juice<br \/>\nsalt and pepper to taste<br \/>\nsour cream (I used fat free) as garnish with freshly chopped cilantro all around<\/p>\n<p>1. Pour the olive oil into a good-sized soup pot and saute the onion for 2<br \/>\nminutes. Add the garlic, pepper, and tomatoes, and continue sauting for<br \/>\nanother 2 minutes over medium heat, until it turns into a regular sauce.<br \/>\nStir often.<\/p>\n<p>2. Add the beans from their cans with their juice, potatoes, water,<br \/>\nbouillon. Bring the soup to a boil and then reduce the heat to low-medium.<br \/>\nCook slowly, covered, for about 20 minutes.<\/p>\n<p>3. Add the cilantro, cumin, lime juice, salt, pepper. Stir well and continue<br \/>\ncooking for another 10 minutes, turn off the heat, and let the soup rest,<br \/>\ncovered, for 5 minutes.
