{"id":1039,"date":"2014-07-16T20:44:35","date_gmt":"2014-07-17T01:44:35","guid":{"rendered":"http:\/\/wesselbest.com\/?p=1039"},"modified":"2014-07-16T20:44:35","modified_gmt":"2014-07-17T01:44:35","slug":"caramel-frosted-banana-bread-ej","status":"publish","type":"post","link":"http:\/\/wesselbest.com\/?p=1039","title":{"rendered":"Caramel Frosted Banana Bread &#8211; EJ"},"content":{"rendered":"<div class=\"moz-text-html\" lang=\"x-western\">\n<table border=\"0\" cellspacing=\"0\" cellpadding=\"0\">\n<tbody>\n<tr>\n<td valign=\"top\">I&#8217;ve made it without the frosting and it is very good. &#8211; Ellen<\/p>\n<p>Yield: 16 servings<\/p>\n<p><strong>Ingredients<\/strong><br \/>\nBanana Bread:<br \/>\n1\/2 to 1 cup water<br \/>\n1\/2 cup ground chia seed (I grind mine in a coffee grinder and then measure out 1\/2 cup)<br \/>\n2 cups almond flour<br \/>\n1\/2 cup Swerve Sweetener<br \/>\n1\/3 cup coconut flour<br \/>\n1\/3 cup unflavoured whey protein powder<br \/>\n1 tbsp baking powder<br \/>\n1\/2 tsp salt<br \/>\n3\/4 cup unsweetened almond milk<br \/>\n3 large eggs<br \/>\n1\/4 cup melted butter<br \/>\n1 tsp banana extract (imitation would also be fine)<br \/>\n1\/2 tsp vanilla extract<br \/>\n1\/4 tsp stevia extract<br \/>\nCaramel Frosting:<br \/>\n4 oz cream cheese, softened<br \/>\n1\/4 cup powdered Swerve Sweetener<br \/>\n6 tbsp whipping cream<br \/>\n1 tsp caramel flavour OR vanilla extract<\/p>\n<p><strong>Instructions<\/strong><br \/>\nBanana Bread:<br \/>\nPreheat oven to 325F and grease a loaf pan very well.<br \/>\nIn a small bowl, combine 1\/2 cup water and chia seed. Stir and let sit to gel. If it remains very thick, add more water (it should resemble mashed bananas in consistency).<br \/>\nMeanwhile in a large bowl, whisk together almond flour, sweetener, coconut flour, whey protein powder, baking powder and salt.<br \/>\nStir in almond milk, eggs, melted butter, banana extract, vanilla, stevia and chia mixture until thoroughly combined.<br \/>\nSpread mixture in prepared baking pan, smoothing the top.<br \/>\nBake 70 to 75 minutes or until golden brown and a tester inserted in the center comes out clean<br \/>\nLet cool in pan 20 minutes and then transfer to a wire rack to cool completely.<br \/>\n<strong>Caramel Frosting:<\/strong><br \/>\nIn a large bowl, beat cream cheese and powdered sweetener until smooth.<br \/>\nBeat in whipping cream and caramel or extract until well combined.<br \/>\nSpread over cooled banana cake and let set about half an hour.<br \/>\nNotes<br \/>\nServes 16. Each serving has 9 g of carbs and 5 g of fiber.
