{"id":1091,"date":"2016-02-16T19:51:22","date_gmt":"2016-02-17T00:51:22","guid":{"rendered":"http:\/\/wesselbest.com\/?p=1091"},"modified":"2016-02-16T20:59:12","modified_gmt":"2016-02-17T01:59:12","slug":"bacon-cheddar-cauliflower-chowder-ellen","status":"publish","type":"post","link":"http:\/\/wesselbest.com\/?p=1091","title":{"rendered":"Bacon-Cheddar Cauliflower Chowder &#8211; Ellen"},"content":{"rendered":"<p><strong><span style=\"text-decoration: underline;\">Ingredients<\/span><\/strong>\u00a0<strong> \u00a0<\/strong>(serves 8)<\/p>\n<p>8 slices center cut\u00a0bacon, chopped and divided<br \/>\n1\/2 small onion, chopped OR 1 teaspoon onion powder<br \/>\n1 celery stalk, chopped<br \/>\n2 garlic cloves, minced<br \/>\nsalt &amp; pepper<br \/>\n4 cups shredded or grated cauliflower (1\/2 large head)<br \/>\n2 Tablespoons water<br \/>\n2 Tablespoons gluten free\u00a0or all purpose\u00a0flour<br \/>\n2 cups chicken broth, divided<br \/>\n2 cups 2% milk<br \/>\n34\u00a0dashes hot sauce (or more or less)<br \/>\n2 1\/2 cups (12oz) shredded sharp cheddar cheese, divided<br \/>\n2 green onions, chopped (optional)<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Directions<\/strong><\/span><\/p>\n<p><strong>1.<\/strong> Whisk together flour and 1\/4 cup chicken broth in a small bowl then set<br \/>\naside.<\/p>\n<p><strong>2.<\/strong> Saute bacon in a large soup pot over medium heat until crisp. Using a<br \/>\nslotted spoon, transfer bacon to a paper towel lined\u00a0plate then remove all<br \/>\nbut 1 Tablespoon drippings from the pot. Add chopped onion (if using,)<br \/>\ncelery, and garlic to the pot then season with salt and pepper and saute<br \/>\nuntil vegetables are tender, about 45\u00a0minutes.<\/p>\n<p><strong>3.<\/strong> Add cauliflower and onion powder (if using) to the pot then stir to combine.<br \/>\nAdd water then place a lid on top and steam cauliflower until tender,<br \/>\nstirring a couple times, about 57\u00a0minutes. Add remaining chicken broth<br \/>\nand milk then turn up heat and bring to a boil.<\/p>\n<p><strong>4.<\/strong> Slowly whisk in flour\/chicken broth mixture while stirring, then turndown heat and simmer<br \/>\n<span style=\"line-height: 1.5;\">for 3-4\u00a0minutes, or until chowder has thickened.<\/span><\/p>\n<p><strong>5.<\/strong> Turn off heat then stir in 2 cups cheddar cheese a little at a time until smooth, then stir in half \u00a0 \u00a0 \u00a0 the cooked bacon. Taste and adjust salt, pepper, and\/or hot sauce if necessary.
