Spelt is a good basic bread flour. A bread made with kamut alone is a bit too cakey. But combining spelt and kamut makes a delicious bread!<br \/>\nThe recipe:<br \/>\n2 cups kamut flour<br \/>\n1 cup spelt flour<br \/>\n3\/4 tsp sea salt<br \/>\n1-1\/2 tbsp vegetable oil or lecithin granules<br \/>\n1-1\/4 cups + 1 tbsp water<br \/>\n3 tbsp honey or barley malt (imparts a subtle flavor)<br \/>\n1-1\/2 tsp yeast<br \/>\nWhen the machine beeps, add 3 generous tbsp of sesame seeds.<br \/>\nAllergy, schmallergy, this bread is good!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Many people who (like my wife) are allergic to wheat can tolerate kamut and spelt.
