Made with cucumbers, tomatoes, kalamata olives, red onion, extra virgin olive oil, fresh lemon and Feta cheese.<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Ingredients<\/strong><\/span><br \/>\n1\u00a0cup\u00a0uncooked quinoa<br \/>\n2\u00a0cups\u00a0water<br \/>\n1\/4\u00a0cup\u00a0red onion\u00a0(diced)<br \/>\n1\/2\u00a0&#8211;\u00a03\/4\u00a0lemon\u00a0(squeezed)<br \/>\n1\/4\u00a0cup\u00a0about 10 kalamata olives, pitted and sliced<br \/>\n2\u00a0tbsp\u00a0extra virgin olive oil<br \/>\n2\u00a0cups\u00a0cucumber\u00a0(peeled and diced (from 1 English))<br \/>\n1\u00a0cup\u00a0cherry tomatoes\u00a0(quartered)<br \/>\n1\/3\u00a0cup\u00a0crumbled feta<br \/>\nsalt and fresh pepper\u00a0(to taste)<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Instructions<\/strong><\/span><br \/>\nRinse quinoa for about 2 minutes, using your hands to\u00a0make sure\u00a0all the saponins are removed.<br \/>\nFill\u00a0a medium pot with water, add quinoa and salt to taste and bring to a boil.
