{"id":1266,"date":"2019-12-11T10:28:13","date_gmt":"2019-12-11T15:28:13","guid":{"rendered":"http:\/\/wesselbest.com\/?p=1266"},"modified":"2019-12-11T10:39:18","modified_gmt":"2019-12-11T15:39:18","slug":"roasted-tomato-basil-soup-cheryl","status":"publish","type":"post","link":"http:\/\/wesselbest.com\/?p=1266","title":{"rendered":"Roasted Tomato Basil Soup &#8211; Cheryl"},"content":{"rendered":"<p><span style=\"font-size: 14pt;\"><strong>Roasted Tomato Basil Soup<\/strong><\/span><\/p>\n<p>3 pounds ripe plum tomatoes, cut in half length wise<\/p>\n<p>1\/4 cup plus 2 tablespoons good olive oil<\/p>\n<p>1 tablespoon kosher salt<\/p>\n<p>1 1\/2 teaspoons freshly ground black pepper<\/p>\n<p>2 cups chopped yellow onions (2 onions)<\/p>\n<p>6 garlic cloves, minced<\/p>\n<p>2 tablespoons unsalted butter<\/p>\n<p>1\/4 teaspoon crushed red pepper flakes<\/p>\n<p>1 (28-ounce) canned plum tomatoes, with their juice<\/p>\n<p>4 cups fresh basil leaves, packed<\/p>\n<p>1 teaspoon fresh thyme leaves<\/p>\n<p>1 quart chicken stock or water<br \/>\n<strong>=======================================================<\/strong><\/p>\n<p>Preheat the oven to 400 degrees F.<\/p>\n<p>Toss together the tomatoes, 1\/4 cup olive oil, salt, and pepper.<\/p>\n<p>Spread the tomatoes in 1 layer on a baking sheet and roast for 45 minutes.<\/p>\n<p>In an 8-quart stockpot over medium heat, saut\u00e9 the onions and garlic with 2 tablespoons<br \/>\nof olive oil, the butter, and red pepper flakes for 10 minutes, until the onions start to brown.<\/p>\n<p>Add the canned tomatoes, basil, thyme, and chicken stock.<\/p>\n<p>Add the oven-roasted tomatoes, including the liquid on the baking sheet.<\/p>\n<p>Bring to a boil and simmer uncovered for 40 minutes.<\/p>\n<p>Pass through a food mill fitted with the coarsest blade.<\/p>\n<p>Taste for seasonings.
