{"id":1313,"date":"2020-10-09T09:44:37","date_gmt":"2020-10-09T14:44:37","guid":{"rendered":"http:\/\/wesselbest.com\/?p=1313"},"modified":"2020-10-09T09:44:37","modified_gmt":"2020-10-09T14:44:37","slug":"slow-cooker-enchilada-lasagna-hannah","status":"publish","type":"post","link":"http:\/\/wesselbest.com\/?p=1313","title":{"rendered":"Slow Cooker Enchilada Lasagna\u00a0&#8211; Hannah"},"content":{"rendered":"<div class=\"moz-text-html\" lang=\"x-unicode\">\n<div dir=\"ltr\"><strong>\u00a0 Slow Cooker Enchilada Lasagna\u00a0<\/strong><\/p>\n<div><\/div>\n<div>\u2022 2 \u00bd lbs ground beef<\/div>\n<div>\u2022 2 small onions<\/div>\n<div>\u2022 2 poblano chiles, seeded and diced ( or 8 oz canned green chiles, check ingredient list)<\/div>\n<div>\u2022 4 garlic cloves, miniced<\/div>\n<div>\u2022 2 tsp dried oregano<\/div>\n<div>\u2022 2 tsp ground cumin<\/div>\n<div>\u2022 \u00bd tsp chili powder<\/div>\n<div>\u2022 2 tbsp cooking fat<\/div>\n<div>\u2022 4-5 large sweet potatoes, peeled and sliced \u00bc inch thick<\/div>\n<div><\/div>\n<div>Sauce:<\/div>\n<div>\u2022 \u00bd onion, finely chopped<\/div>\n<div>\u2022 4 garlic cloves, minced<\/div>\n<div>\u2022 32 oz canned tomato sauce (only pure ingredients)<\/div>\n<div>\u2022 1 cup chicken stock<\/div>\n<div>\u2022 \u00bc cup chili powder + more to taste (or 2 dried chipotle chiles, stems and seeds removed, finely chopped)<\/div>\n<div>\u2022 1 tsp dried oregano<\/div>\n<div>\u2022 1 tsp ground cumin<\/div>\n<div>\u2022 1 tbsp cooking fat<\/div>\n<div>\u2022 Sea salt and freshly ground black pepper<\/div>\n<div><\/div>\n<div><\/div>\n<div>\u00a0 1. Start the sauce by heating a sauce pan over medium-high heat and add 1 tablespoon cooking fat, cook the onion until soft, about 3 minutes.<\/div>\n<div>2. Add the garlic and continue to cook for an additional minute.<\/div>\n<div>3. Add remaining ingredients for the sauce and bring to a boil.<\/div>\n<div>4. Turn the heat down to low and simmer for 15 minutes, stirring occasionally, until the sauce thickens slightly.<\/div>\n<div>5. Once simmering, taste and adjust seasoning with more chili powder if needed.<\/div>\n<div>6. While the sauce is simmering, heat 2 tablespoons of cooking fat in a large skillet over medium heat.<\/div>\n<div>7. Saut\u00e9 the 2 chopped onions and 4 garlic cloves until translucent, about 6 minutes.<\/div>\n<div>8. Add the ground meat, chiles, oregano, cumin, chili powder and season well with salt and pepper to taste.<\/div>\n<div>9. Cook until the meat is browned, about 6-8 minutes.<\/div>\n<div>10. Remove from the heat.<\/div>\n<div>11. Once the sauce has thickened, remove from the heat.<\/div>\n<div>12. Place a thin layer of sauce on the bottom of the slow cooker, then create a layer of sweet potato slices overlapping slightly, add a layer of ground beef, then more sauce.<\/div>\n<div>13. Repeat starting with the sweet potatoes, then beef and sauce.<\/div>\n<div>14. Continue until you use all of the ingredients, saving some sauce for the top. 15. Cover and cook for 4 hours, or until sweet potatoes are tender.<\/div>\n<div>16. Transfer \u00bd of the lasagna to a container and reserve for leftovers.<\/div>\n<div>17.
