I got\u00a0 this from Anne Manahl. <\/em><\/p>\n<p>1 T. Olive oil<br \/>\n1\u00a0 onion, chopped<br \/>\n1\u00a0 garlic clove,minced<br \/>\n3\u00a0 slices Canadian Bacon (diced )(I use\u00a0 1\/3 &#8211; 1\/2\u00a0 c.)<br \/>\n1\u00a0 t. ground cumin<br \/>\n3 14.5 oz\u00a0 cans black beans<br \/>\n1 T. Tomato\u00a0 paste<br \/>\n1\/2\u00a0 t. salt<br \/>\n3\u00a0 T. red\u00a0 wine vinegar<br \/>\n1 T. dry sherry<br \/>\nshredded cheddar cheese (optional)<\/p>\n<p>In a large nonstick saucepan heat oil. Saute onion and garlic for 5 minutes. Add bacon and cumin, saute until fragrant, about 3 minutes. Stir in the beans and just over 2 cups\u00a0 water\u00a0 (the recipe was originally written when beans came in different size\u00a0 cans, so the proportions are a little different). Cook until thickened, about 15\u00a0 minutes. With potato masher or side of a wooden spoon, mash some of\u00a0 the beans. Stir in the tomato paste and salt. Heat to serving. Stir\u00a0 in the vinegar\u00a0 and sherry.
