{"id":1564,"date":"2009-12-28T16:04:53","date_gmt":"2009-12-28T21:04:53","guid":{"rendered":"http:\/\/www.terrywessel.com\/EdithRecipeArchive\/wordpress\/?p=1501"},"modified":"2009-12-28T16:04:53","modified_gmt":"2009-12-28T21:04:53","slug":"lemon-ice-box-dessert-from-ames-tribune","status":"publish","type":"post","link":"http:\/\/wesselbest.com\/?p=1564","title":{"rendered":"LEMON ICE BOX DESSERT  &#8212; from Ames Tribune"},"content":{"rendered":"<p>1 package unflavored gelatin<br \/>\n1 \u00bc cups crushed vanilla wafers, divided<br \/>\n2 lemons<br \/>\n4 eggs, separated<br \/>\n1 cup granulated sugar, divided<br \/>\n1 cup whipping cream<br \/>\nIn a small bowl dissolve gelatin in \u00bc cup cold water.\u00a0 Set aside.<br \/>\nSpray a 9 X 5 inch loaf pan lightly with cooking spray, then line the pan with a sheet of plastic wrap, allowing the wrap to hang over the long edges of the pan (the wrap will come about halfway up the short sides of the pan).\u00a0 Sprinkle \u00bd cup of crushed vanilla wafers in the bottom of the pan: set aside<br \/>\nZest the lemons: set the zest aside.\u00a0 Squeeze the lemons<br \/>\nIn a saucepan, whisk the egg yolks with \u00bd cup of the sugar, the lemon zest and the lemon juice.\u00a0 Cook over low heat, stirring constantly until the mixture is boiling and thickened.\u00a0 Add the gelatin and stir until well-dissolved;\u00a0 remove from heat.\u00a0 Cool to room temperature.<br \/>\nWhen the mixture is cool, whip the egg whites until they begin to stiffen, and then slowly beat in the remaining \u00bd cup sugar until whites are stiff but not dry.\u00a0 Set aside.<br \/>\nIn a separate bowl beat whipping cream until it holds its shape.<br \/>\nFold the whipping cream into the yolk mixture.\u00a0 Fold in the egg whites.\u00a0 Spoon the mixture into the prepared pan and tap gently on counter to remove air bubbles.\u00a0 Top with remaining crushed wafers.<br \/>\nChill overnight.\u00a0 To serve, run a small spatula along the short edges of the pan.\u00a0 Place an inverted serving plate on top of the pan, and then flip the plate and pan together.\u00a0 Peel off the plastic wrap.\u00a0 Sprinkle with wafer crumbs, if desired.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>1 package unflavored gelatin 1 \u00bc cups crushed vanilla wafers, divided 2 lemons 4 eggs, separated 1 cup granulated sugar, divided 1 cup whipping cream In a small bowl dissolve gelatin in \u00bc cup cold water.\u00a0 Set aside.
