{"id":47,"date":"2009-07-23T00:42:32","date_gmt":"2009-07-23T04:42:32","guid":{"rendered":"http:\/\/terrywessel.com\/wordpress\/?p=47"},"modified":"2009-07-23T00:42:32","modified_gmt":"2009-07-23T04:42:32","slug":"gnocchi-with-zucchini-ribbons-and-parsley-brown-butter","status":"publish","type":"post","link":"http:\/\/wesselbest.com\/?p=47","title":{"rendered":"Gnocchi with Zucchini Ribbons and Parsley Brown Butter"},"content":{"rendered":"<p><strong>Ingredients<\/strong><\/p>\n<p>1 pound fresh or frozen gnocchi<\/p>\n<p>2 tablespoons butter<\/p>\n<p>2 medium shallots, chopped<\/p>\n<p>1 pound zucchini, very thinly sliced lengthwise (see Tip)<\/p>\n<p>1 pint cherry tomatoes, halved<\/p>\n<p>1\/2 teaspoon salt<\/p>\n<p>1\/4 teaspoon grated nutmeg<\/p>\n<p>Fresh-ground pepper to taste<\/p>\n<p>1\/2 cup grated Parmesan cheese<\/p>\n<p>1\/2 cup chopped fresh parsley<\/p>\n<p><strong>Cooking Directions<\/strong><\/p>\n<p>1. Bring a large saucepan of water to a boil.<\/p>\n<p>Cook gnocchi according to package instructions until they float, 3 to 5 minutes.<\/p>\n<p>Drain.<\/p>\n<p>2. Meanwhile, melt butter in a large skillet over medium-high heat.
