{"id":473,"date":"2009-10-11T18:15:14","date_gmt":"2009-10-11T23:15:14","guid":{"rendered":"http:\/\/wesselbest.com\/?p=473"},"modified":"2009-10-11T18:15:14","modified_gmt":"2009-10-11T23:15:14","slug":"roasted-winter-vegetables-beth","status":"publish","type":"post","link":"http:\/\/wesselbest.com\/?p=473","title":{"rendered":"Roasted Winter Vegetables &#8211; Beth"},"content":{"rendered":"<p>Recipe #148129 | 55 min | 20 min prep<\/p>\n<p>By: Phil Franco<\/p>\n<p>Courtesy of Barefoot Contessa<\/p>\n<p>SERVES 8 (change servings and units)<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>1 lb carrot, peeled<\/p>\n<p>1 lb parsnip, peeled<\/p>\n<p>1 large sweet potato, peeled<\/p>\n<p>1 small butternut squash, peeled and seeded (about 2 pounds)<\/p>\n<p>3 tablespoons olive oil<\/p>\n<p>1 1\/2 teaspoons kosher salt<\/p>\n<p>1\/2 teaspoon fresh ground black pepper<\/p>\n<p>2 tablespoons chopped flat leaf parsley<\/p>\n<p><strong>Directions<\/strong><\/p>\n<p>1 &#8211; Preheat the oven to 425 degrees F.<\/p>\n<p>2 &#8211; Cut the carrots, parsnips, sweet potato, and butternut squash in 1 to 1 1\/4-inch cubes. All the vegetables will shrink while baking, so don&#8217;t cut them too small.<\/p>\n<p>3 &#8211;\u00a0 Place all the cut vegetables in a single layer on 2 baking sheets. Drizzle them with olive oil, salt, and pepper.
