{"id":663,"date":"2010-05-07T13:30:56","date_gmt":"2010-05-07T19:30:56","guid":{"rendered":"http:\/\/wesselbest.com\/?p=663"},"modified":"2010-05-07T13:30:56","modified_gmt":"2010-05-07T19:30:56","slug":"roasted-cauliflower-beth","status":"publish","type":"post","link":"http:\/\/wesselbest.com\/?p=663","title":{"rendered":"Roasted Cauliflower &#8211; Beth"},"content":{"rendered":"<p>Great&#8230;.continuing to play with roasted veggies<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Ingredients<\/strong><\/span><\/p>\n<p>1 head of cauliflower<\/p>\n<p>2-3 cloves of garlic, peeled and coarsely minced<\/p>\n<p>Lemon juice (from 1\/2 or a whole lemon)<\/p>\n<p>Olive oil<\/p>\n<p>Coarse salt and freshly ground black pepper<\/p>\n<p>Parmesan cheese<\/p>\n<p>Method<\/p>\n<p>1.\u00a0 Preheat oven to 400\u00b0F. Cut cauliflower into florets and put in a  single layer in an oven-proof baking dish. Toss in the garlic. Squeeze  lemon juice over cauliflower and drizzle each piece with olive oil.  Sprinkle with salt and pepper. If the oven hasn&#8217;t reached 400\u00b0F yet, set  aside until it has.<\/p>\n<p>2.\u00a0 Place casserole in the hot oven, uncovered, for 25-30 minutes, or  until the top is lightly brown. Test with a fork for desired doneness.  Fork tines should be able to easily pierce the cauliflower. Remove from  oven and sprinkle generously with Parmesan cheese. Serve immediately.
