{"id":765,"date":"2012-01-02T18:30:06","date_gmt":"2012-01-02T23:30:06","guid":{"rendered":"http:\/\/wesselbest.com\/?p=765"},"modified":"2012-01-02T18:32:17","modified_gmt":"2012-01-02T23:32:17","slug":"white-bean-soup-beth","status":"publish","type":"post","link":"http:\/\/wesselbest.com\/?p=765","title":{"rendered":"White Bean Soup  &#8211; Beth"},"content":{"rendered":"<div lang=\"x-unicode\">\n<p><span style=\"color: #ff6600;\"><strong>1 lb dry white beans<br \/>\n<\/strong><\/span><strong style=\"color: #ff6600;\">12 c. water<br \/>\n<\/strong><strong style=\"color: #ff6600;\">2 onions<br \/>\n<\/strong><strong style=\"color: #ff6600;\">2 carrots<br \/>\n<\/strong><strong style=\"color: #ff6600;\">2 leeks<br \/>\n<\/strong><strong style=\"color: #ff6600;\">1 celery stalk<\/strong><strong style=\"color: #ff6600;\">a few leaves of garden greens (spinach, chard, or any other type of green)<br \/>\n<\/strong><strong style=\"color: #ff6600;\">4 cloves garlic<br \/>\n<\/strong><strong style=\"color: #ff6600;\">6 T. olive oil<br \/>\n<\/strong><strong style=\"color: #ff6600;\">2 bouillon cubes<br \/>\n<\/strong><strong style=\"color: #ff6600;\">salt and pepper to taste<br \/>\n<\/strong><strong style=\"color: #ff6600;\">Finely chopped and minced thyme leaves (couldn&#8217;t find fresh so I used ground)<\/strong><\/p>\n<div>\n<ol>\n<li>Soak the dry beans in cold water for at least 10 hours. Rinse them well and put them into a large sou pot with water.<\/li>\n<li>Cut the onions, carrots, leeks, celery, and garden greens into thing pieces. Mince the garlic well. Add them all to the soup, along with the oil and bouillon cubes<\/li>\n<li>Cook the soup, covered, over medium heat for about 60 minutes, stirring from time to time. Let the soup sit for about 10 minutes with the lid on.<\/li>\n<li>Add salt, pepper, and thyme.
