I kept this tempeh chili recipe vegan, but you could always top it off with cheese and sour cream, if you&#8217;d like. Because the tempeh simmers so long in this recipe, there&#8217;s no need to pre-simmer it, as with most tempeh recipes.<\/div>\n<h3 id=\"rI\">Ingredients:<\/h3>\n<ul>\n<li><strong><span style=\"color: #ff6600;\">2 tbsp olive oil, divided<\/span><\/strong><\/li>\n<li><strong><span style=\"color: #ff6600;\">1 8-ounce package\u00a0<a href=\"http:\/\/vegetarian.about.com\/od\/glossary\/g\/Tempeh.htm\"><span style=\"color: #ff6600;\">tempeh<\/span><\/a>, diced<\/span><\/strong><\/li>\n<li><strong><span style=\"color: #ff6600;\">2 tsp soy sauce<\/span><\/strong><\/li>\n<li><strong><span style=\"color: #ff6600;\">1 red bell pepper, chopped<\/span><\/strong><\/li>\n<li><strong><span style=\"color: #ff6600;\">1 green bell pepper, chopped<\/span><\/strong><\/li>\n<li><strong><span style=\"color: #ff6600;\">2 cloves garlic, minced<\/span><\/strong><\/li>\n<li><strong><span style=\"color: #ff6600;\">1 onion, diced<\/span><\/strong><\/li>\n<li><strong><span style=\"color: #ff6600;\">1 4-ounce can sliced green chilis<\/span><\/strong><\/li>\n<li><strong><span style=\"color: #ff6600;\">1 15 ounce can kidney beans or chili beans<\/span><\/strong><\/li>\n<li><strong><span style=\"color: #ff6600;\">1 8 ounce can diced tomatoes<\/span><\/strong><\/li>\n<li><strong><span style=\"color: #ff6600;\">1 tbsp chili powder<\/span><\/strong><\/li>\n<li><strong><span style=\"color: #ff6600;\">1\/2 tsp cumin powder<\/span><\/strong><\/li>\n<li><strong><span style=\"color: #ff6600;\">1\/4 tsp cayenne pepper, or to taste<\/span><\/strong><\/li>\n<li><strong><span style=\"color: #ff6600;\">1 small can corn (optional)<\/span><\/strong><\/li>\n<li><strong><span style=\"color: #ff6600;\">fresh cilantro to garnish (optional)<\/span><\/strong><\/li>\n<\/ul>\n<h3 id=\"rP\">Preparation:<\/h3>\n<div>Using one tablespoon of olive oil, sautee tempeh until golden brown, about 3-5 minutes, add soy sauce, and sautee another minute or two, until soy sauce is sticky and dissolved.
