Blueberry mug muffins
Coconut cooking oil (optional)
1 large egg
2 tbs + 1 tsp water
1 tbs coconut oil or butter
1/4 c low carb, gluten free baking blend
4 tsp Truvia sweetener
Pinch of salt
2 tbs blueberries
1/2 tsp, baking powder
Mix all ingredients in a large coffee mug. Microwave for 1 minute 15 seconds
We haven’t had to use the cooking spray. They come out of the mug easy without.
To make them chocolate chip we substitute 1 1/2 tbs 70% chocolate chips.
The baking blend is flax meal, coconut flour, oat flour and almond flour. I got mine at
a Whole Foods store and not even sure what the ingredients are.
