1 1/2 cups warm water
2 tablespoons oil
3 tablespoons honey
5 cups spelt flour
1 1/2 teaspoons salt
2 teaspoons dough enhancer (optional)
1 1/2 teaspoons SAF yeast (Red Star may work as well)
Home made cycle as follows:
preheat: off
knead: 15 min
rise 1: 1 hour 20 min(or 1 inch above pan)
rise2: off
rise3: off
bake: 50 min.
