Bake 1 piecrust — Brush with 1 tsp. Dijan Style Mustard and let cool for 10     minutes

Layer in piecrust:
1/4 cup minced fresh onion
3 1/2 oz Swiss cheese, cut into strips
1/4 lb. mushrooms, diced (1 1/2 cup)

Beat 3 large eggs with 3/4 cup plain low-fat yogurt, 1/2 cup lo fat buttermilk, 1 T Grated Parmesan cheese, 2 teas. cornstarch, 1/2 tsp. salt, 1/8 teas. pepper, 1/8 tsp. nutmeg.

Pour into crust.  Bake 40-45 minutes or until custard is set and lightly browned.

Quiche may be frozen,  wrap in portions.
