Bake single pie shell
Put 2 cups milk in top of double boiler–Heat
Mix in large plastic pitcher:
1/2 c. flour
3/4 c. sugar
1/4 t. salt
Add to milk when it is hot–stir well and cook for 8-10 minutes. Separate 3 eggs putting yolks in pitcher and whites in small mixing bowl. Beat egg yolks slightly. Pour small amount of milk mixture over yolks. Stir well and put all together in double boiler and cook for 2 minutes.
Remove from heat. Add 2 T. oleo, 1 t. vanilla and 1/2 cup coconut.
Pour in baked pie shell and top with meringue. Put in oven until brown.
