1 1/2 c. br. sugar 1 t. salt
2/3 c. oil 1 t. soda
1 egg 2 1/2 c. flour
1 c. buttermilk or sour milk 1/2 t. cinnamon
1 t. vanilla 1 1/2 c. diced rhubarb.
Mix br. sugar, oil and egg; beat well. Add buttermilk, then sifted dry ingredients. Blend. Stir in rhubarb. Pour into pan about 9×12″. Mix topping of 1/2 c. sugar and 1 t. cinnamon; sprinkle over cake. Bake at 350 degrees. 40-45 minutes or until done.
