2 lg. eggs 1 c. lemon-flavored low-fat yogurt
1 c. 99% fat free cottage cheese
1 t. vanilla 1/4 c. flour
1/4 t. salt 2 T. honey
2 ripe medium bananas, peeled and sliced.
Lightly coat a 9″ pie plate with cooking spray. Place eggs, yogurt, cottage cheese and vanilla in a blender or food processor. Cover and blend a few seconds at high speed, until smooth. With blender running at low speed, add flour, and salt. Add honey 1 T. at a time. When mixture is smooth, pour into prepared plate. Bake 25 to 30 minutes at 350 degrees, or until knife inserted in the center come out clean. Remove from oven and let cool before serving.
