Spelt and Kamut Bread
In mixing bowl mix:
6 cups warm water
1/3 cup honey
1/3 cup oil
3 Tbsp dough enhancer
3 Tbsp SAF instant yeast
4 cups Spelt Flour
Mix thoroughly for 15 seconds. Cover and let sit for 10 min till bubbly.
Add:
2 tsp salt
1/2 cup Vital Wheat Gluten
4-6 cups Kamut flour
Enough Spelt flour to clean sides of the bowl.
Knead for 5-10 min. Form into loaves, cover and let rise until doubled.
Bake at 350 for 30-40 minutes.
