Metric Ingredients Imperial
500g  spelt flour  1lb
2tsp  salt  2tsp
2tsp  cream of tartar  2tsp
1tsp  bicarbonate of soda  1tsp
300ml  milk  ½ pint
Method
1. Mix together flour, salt, soda and cream of tartar.
2. Add milk and mix to a soft dough.
3. Shape into a ball and place on an oiled baking tray.
4. Cut a 2cm(1″) deep cross onto the top of the dough.
5. Cover the loaf with a deep 7″ (180mm) cake tin.
6. Bake in oven preheated to 220°C/425°F/Gas Mark 7 for 35mins.
7. Cool bread on a wire rack and eat while still fresh.
