1/4 cup butter
1/4 cup flour
1/2 teas salt
1/4 teas. pepper
1 can mushroom soup, undiluted
1 tableespoon grated onion
2 pkgs chopped spinach, cooked and thoroughly drained
2 tbls Sherry (optional)
Melt butter; blend in flour and seasonings.  Add soup and cook, stirring constatntly, until thick and smooth.  Turn into a double boiler and add remaining ingredients.  Cook until heated
