4 tablespoons butter
1 cup brown sugar
3 large eggs, separated
3 tablespoons cornstarch
3 cups milk
1 teaspoon vanilla
Place butter and sugar in heavy saucepan and melt over heat, stirring until a rich brown color.  Reduce heat and cook slowly while combining other ingredients.  Beat egg yolks, liquefy cornstarch with a small amount of milk.  Add to egg yolks, combine with the rest of the milk.  Combine milk mixtue to the butterscotch mix.  Cook until thick.  Add vanilla, stir well and pour into baked pie shell.  Cover with meringue and bake in a slow oven 15 to 20 minutes.  Cool.  This makes a very large pie.
