Fresh Strawberry Pie
Clean and drain 1 qt. or more berries. Divide in half – save the nicest ones and dry on paper towel.
Put in saucepan:
1 cup sugar (less if berries are sweet)
1/2 c. water
4-5 T. cornstarch
1/2 berries, sliced
Boil 5 min. or until thickened and berries are cooked up. Set in pan of ice water to cool.
May spread a small amount of softened cream cheese (I use the ‘lite’ tub cream cheese) over pie crust before placing berries in the shell. Arrange the whole berries in bottom of baked pie shell. Pour the cooled, cooked mixture over the berries and place in refrigerator to chill and set for several hours before serving.
