RAVIOLI SUPPER SOUP — ELLEN HADWIGER
1 lb. ground beef
1 pkg. Betty Crocker Hamburger Helper mix for ravioli
6 cups hot water
1 can diced tomatoes (Un drained)
1 pkg (10 Oz) frozen mixed vegetables, thawed
2 Tbls. instant minced onion
2 cloves garlic finely chopped
1 small carton creamed cottage cheese
shredded parmesan cheese — if desired
Cook beef in large pot until brown, drain. Stir in pasta, sauce mix, water, tomatoes, vegetables, onion and garlic. Heat to boiling stirring occasionally, reduce heat and cover and simmer 15 minutes stirring occasionally, until pasta is tender. Remove from heat, stir in cottage cheese. Let stand 5 minutes or until desired consistency. Serve with cheese. Serves 4
