Gazpacho — Isabel M.
1 sm. garlic clove 4 T. lemon jc.
6 lg. ripe tomatoes 3/4 pint tomato jc.
1 Spanish onion (sweet) 1 green pepper
1 cucumber 6 T. olive or corn oil
2 T. butter and 2 slices of bread diced or croutons.
Blend 4 tomatoes and garlic in blender; add 1/2 chopped onion, 1/2 green pepper and 1/2 cucumber (in chunks) and blend all again?. Strain mixture and refrigerate. (I do not do this–I just add the following. the oil, lemon jc., tomato jc, and stir and refrigerate. Chop up coarsely rest of berries and when *servingspoon? over bowl or cup of cold soup. I think I put bread in blender with rest of ingredients when I made it the last time. One can vary this to suit ones taste. There are many variations of this. I think I add pepper (black) but no salt. Some use Cayenne pepper.
