Quiche is an easy dish and variations are endless once you learn basics.
A. Always slightly bake shell first.
B. Basic custard is 4 lg. eggs, and 1 c. light cream or whole milk plus a dash of Tabasco and nutmeg as desired.
Broccoli:
1 pkg. chopped broccoli or 1 lb. fresh and cut up after blanching (can be more to taste.)
1/2 c. Swiss cheese 1/2 c. mild cheddar
4 eggs 1 c. 1/2 and 1/2
2 T. lemon jc. 1/2 t. salt
dash of Tabasco
Sprinkle broccoli with cheese in slightly baked shell. Beat eggs, cream lemon jc. and salt and pepper till mixed but not frothy. Pour in shell. Bake at 350 for 35-40 min.
