Rhubarb Cake — Carrie Erickson
1/2 c, butter 1 1/2 c. brown sugar
1 egg 1 c. buttermilk
1 t. vanilla 2 c. flour
1 t. soda dash salt
1 1/2 c. finely cut rhubarb
Cream butter and sugar. Add egg, buttermilk and vanilla. Sift together flour, soda and slat. Gradually add to sugar mixture. Stir in rhubarb. Pour into well greased 9×9 pan. Combine and sprinkle over top:
1/4 c. sugar 1 t. cinnamon
1/2 c. chopped walnuts.
Bake at 350 45-50 minutes.
