1 medium head cauliflower
1/2 c. cornflake crumbs
1/2 lb. cooked ham, cubed
1 c. shredded cheddar cheese
1/3 c. chopped green peppers
1 c. dairy sour cream
1/2 c. grated Parmesan cheese
Paprika
Divide cauliflower into florets. Parboil 8-10 minutes or until almost tender and drain. Mix cauliflower with crumbs. Add ham, Cheddar cheese and green pepper. Place in buttered, shallow 1 1/2-qt. casserole.* Spread sour cream over top, sprinkle with Parmesan cheese, and bake in preheated 325 oven 10-15 minutes or until heated through. Sprinkle with paprika.
Note: Casserole may be prepared ahead to this step and refrigerated. Heat for 15-20 minutes or until Cheddar cheese melts. Add sour cream and Parmesan cheese. Return to oven for 10-15 additional minutes.
