Pumpkin Muffins – Beth
1 1/2 c. flour
1 1/2 t. cinnamon
1 t. baking soda
1 t. salt
1 t. ginger
1/2 t. nutmeg
1/4 t. cloves
1/4 t. baking powder
Combine in another bowl:
1/3 cup milk
1/2 t. vanilla
In large bowl, beat until creamy:
6 T. butter
gradually add and beat on high:
1 c. sugar
1/3 c. packed brown sugar
Beat in
2 eggs
Add and beat on low until just blended
1 c. pumpkin (I use the whole can)
Mix all together alternating (yeah…like I take the time to do that!)
May also add walnuts, pecans or dates
Muffin tins
Bake at 350 for 15-20 minutes
