Zesty Cheese Soup – EJ
You have to be the master of the can opener for this one !
Note from Terry: if you really want to zest it up, get diced tomatoes with cilantro and lime, and the American cheese with jalapenos or Pepper Jack
1 – can (15-1/4 oz) whole kernel corn, drained
1 – can (15 oz) pinto (or red) beans, rinsed and drained
1 – can (14-1/2 oz) chicken broth
1 – can (10 oz) premium chunk white chicken, drained
1 – can (4-1/2 oz) chopped green chilies
1 – can (10oz) diced tomatoes with green chilies
1 pound process American cheese, cubed
Crushed tortilla chips, optional
In a 3-qt saucepan, combine the first seven ingredients. Cook and stir until cheese is melted. Garnish with tortilla chips if desired. Yield: 6-8 servings (2 qts)
