1 1/4 vegetable oil
2 c. sugar
2 lg eggs
2 t. vanilla
3 c. flour
1 t. baking soda
1/2 t. salt
1 t. cinnamon
3 c. peeled, finely chopped fresh apples
1 c. walnuts
1/2 c. raisins
Combine oil, sugar, eggs and vanilla and blend. Add dry ingredients and mix well. Stir in apples, nuts and raisins. Bake at 350 for one hour in greased cake pan. Turn on oven, open door, and leave cake in until cool. Drizzle with a frosting of powdered sugar and milk, or dust with powdered sugar and sprinkle with more ground walnuts. (This is a very heavy batter.)
